Egg whites are really a perfect food for dieting. Complete protein and nothing but protein. Many of my friends were completely fooled by this one. They had no idea there was no yolk! Beating the egg white makes it fluff nicely and what you get is really an egg pancake. This is incredibly low calorie and yet very tasty. If you are particularly hungry, go ahead and throw in one yolk.
2 egg whites
1 tbsp onion powder
1/4 cup chopped onion
Salt and pepper to taste
Italian bread or bagel
Ketchup
In a small bowl, combine egg whites, onion, onion powder, salt and pepper. Whisk until ingredients are blended and egg white shows foam. Spray a small non-stick frying pan with PAM or other non-stick spray. Fry the egg, covered, on medium heat for about 2 minutes. Check to see if edges are brown and top has begun to turn white. When the edges are brown and pulling away from the sides of the pan, flip the egg. Cook for about 1 minute. Serve with ketchup on toasted Italian bread or a bagel.

This pasta salad just seemed to happen. I put all my favorite ingredients together and had a winner. It’s easy to adjust to different tastes. You can throw in sun-dried tomatoes instead of fresh, or use dried basil. Easy to make and can feed you all week.
1 lb tri-color veggie rotini
1/2 cup extra virgin olive oil
1/4 balsamic vinegar
1 small red onion quartered and sliced
4 medium ripe tomatoes, peeled
1 can sliced black olives, drained
2 pkgs Il Villagio mozzarella cheese, cubed
Dried italian seasoning to taste
Fresh Basil
Cook pasta until aldente, drain, and place in a large bowl Add olive oil and vinegar and toss to coat Add onions, tomatoes, olives, mozzarella and seasoning. Chill. When ready to serve, add fresh basil and toss.
Time to prepare: About 20 minutes, chill overnight.
When you are trying to eat healthy, you make a lot of salads. This one is especially good in the summer when you can get some fresh dill. This recipe is for a single serving.
1/2 English cucumber
2 tbsp sour cream
3/4 cup fresh dill chopped
1 3oz package (or can, drained) Albacore tuna
1 slice chopped vidalia onion
cherry tomatoes
crumbled extra sharp cheddar cheese (I like Yancey’s Fancy)
salt and pepper to taste
Combine all ingredients, mix well, and enjoy.
Time to prepare: About 10 minutes.
This is a salad that you really make by eye. I don’t know exactly how much of each ingredient I put in it and it tends to come out a little differently each time. Just eyeball it as you determine how hungry you are. This is a single serving.
spring mix lettuces
olive oil
balsamic vinegar
chopped vidalia onion
baby carrots
extra sharp cheddar cheese crumbled (I like Yancey’s Fancy)
dried cranberries
cashews and/or almonds (I use both)
dried basil and oregano (Italian seasoning)
Romano cheese and garlic croutons
grated Romano or Parmesan cheese
salt and pepper
Toss all ingredients together until salad is well coated. Enjoy.
